Chef's Choice 310 Compact Diamond Hone Sharpener



Superb, but consider the next model up IF...
If you're anything like us, you probably spent a lot of money on your knives a while back but secretly ask yourself "why did I bother?" because they just don't special anymore. That's because they've never been as sharp as when you bought them - something this gizmo can DEFINITELY change.

This is a superb knife sharpener - Cooks Magazine rated the Chefs Choice absolutely the best electric model. It puts the kind of edge on your old knives that makes you realize you'd forgotten the true meaning of "sharp".

There's only one flaw in their basic model, though. If your knives have gotten very dull, or you want to be a hero once in a while and put a better-than-new edge on a friend's knives, buy the model 110 instead. That model adds a heavier "grinder" blade (seen on the far left of sharpener in the picture) that can take off more metal quicly while creating the basic, third bevel on their "trizor" edge. Not as good as a professional sharpening or by hand but...
Even though I normally use a diamond sharpening block and know how to check the angles of the bevel, I have to admit, this device is quick and easy.

It gives an acceptable edge as long as you use it according to directions. It is convenient, as it can sit on your counter or be pulled out of the cupboard in a jiffy. So you tend to keep your knives sharp. The problem with hand sharpening is that it is finicky work that takes time. This is faster and easier, so you tend to do it oftener.

A sharp knife is actually a safer knife as it cuts easily. If you force a dull knife, it can slip and make a nasty cut. (The worst cut I ever saw was with a knife too dull to cut wax. It had no edge, but made a nasty, torn gash. The user was forcing the dull edge through wax and got injured.) So keep your knives sharp and in a block and use them with respect. This sharpener will certainly help you do that.

I have been sharpening knives for over 45 years and this is the fastest, easiest way to get an excellent multi-angle edge on ALL of your knives. I orginally purchased a Model 300 about 12 years ago. The 310 is much better because it sharpens all of the way to the handle, a big issue with small blade pocket knives.
If you like sharp knives and either do not have the skill or the time to do it by hand get yourself one of these.
